Puff Puff is a popular west African street food that has become a favourite treat for many. It has a special place in the hearts of many West Africans. For many born and raised in the region, it is more than just a tasty food they enjoyed in their childhood. This delicious deep-fried dough is most commonly known as Puff Puff, which is what it is called in Nigeria and Cameroon. However, the name differs from country to country. In Ghana, it is called Bofrot, Botokoin in Togo, and Bofloto in Ivory Coast. Everyone can agree that you can never have just one Puff Puff!

One of the great things about African Puff Puff is that it is made from just a few key ingredients and is very simple to make. Different African countries have slight variations of Puff Puff. For example, Nigerian Puff Puff tends to have more spices than other Puff Puff mixtures while Ghanaians like to add vanilla.

The main ingredients for Puff Puff include:

  • Warm Water – must be at the correct temperature. If it is too hot, it will kill the yeast. If it’s too cold, it will not activate the yeast.

Preparation: How to make Puff Puff

Buffrot Puff Puff Mix makes preparing Puff Puff as simple as 1-2-3. Each package contains all the necessary ingredients to make the deliciously tasty Puff Puff. All you need to do is add water and let the batter sit for 30 minutes. Once you have done this, follow the following preparation instructions.


Heat your oil.

Pour cooking oil into a large saucepan until you have about 3 inches of oil in the pan. Turn on the burner and set it to low heat.


Test the heat of the oil.

After a couple of minutes, test the oil to ensure that it is hot enough to fry your Puff Puff. Test the oil by dropping a small amount of batter into the oil. If the oil is not hot enough, the batter will sink to the bottom of the pan and stay there. You will know that the oil is hot enough when the batter initially sinks and then rises to the top.


Fry Puff Puff.

You can either use your hands to grab some of the mixture and drop it into the oil, or you can use a spoon to scoop up the batter and a second spoon to scrape the batter off the first spoon and drop it into the oil in a ball shape.


Check for readiness.

After the ball has been frying for a few minutes, check to see if the bottom is golden brown. If it is, this means it is done on that side.


Flip Puff Puff.

Once the bottom of the ball is golden brown, use a spoon to turn the ball over and allow it to fry for a few minutes on that side.


Remove from oil.

Once both sides of your Puff Puff are golden brown, use a large spoon to remove the Puff Puff from the pan and place it in a plate or container lined with a paper towel to absorb some of the excess oil.


Coat Puff Puff.

 If you would like a sweeter Puff Puff, sprinkle table sugar, powdered sugar or cinnamon to enhance the taste.

Puff Puff Healthy Alternatives

While there is a substantial amount of oil used in frying Puff Puff, there are ways to make this addictive treat healthier.

Use Olive Oil or Coconut Oil Instead of Vegetable Oil – vegetable and palm oil are higher in calories and fat than coconut oil or virgin olive oil

Add Vegetables – a way to make your Puff Puffs healthier is to add some vegetables or superfoods like grated carrots, Chia seeds or flax seeds.

Add Less Sugar – by reducing the amount of sugar you add to a mixture, or choosing not to coat your Puff Puff in sugar can cut down the amount of sugar you ingest. Another tip is to replace white sugar with brown sugar or honey.
